Ryan Swanson, Chef de Cuisine at Kai, has prepared an exquisite seven-course prix-fixe tasting menu to be offered on Tuesday, February 14thThis specialty menu entitled “Tachchu,” the Pima word for love, will be offered at $220 per person with wine parings selected by Sommelier and Wine Director Kevin Lewis available at an additional $100 per person.

Exclusive menu highlights include; “Roses & Foie Gras” with Hudson Valley foie gras, pink peppercorn crust and rose perfume along with red velvet and blood orange cake.  “Love Birds” will follow with a roasted guinea hen, pheasant and quail torchon, king trumpet mushrooms and a desert herb bouquet.  Continue the celebration of fine food with the option of two different entrees.  Select from a compressed halibut with Timut berry, pinon espuma, braised kalettes and pickled cauliflower, or “The Mangalista Pig” with crisp belly, saguaro and pomegranate syrup, seared tenderloin, acorn and burnt cinnamon ash beside salt roasted roots.  Complete the dining journey of love with the chocolate raspberry torte fashioned with Manjari chocolate ganache, raspberry hibiscus sorbet, devil’s cake and rosewater meringue.

Ko’sin restaurant will offer a four-course prix-fixe menu on Tuesday, February 14th from 5:30 p.m. – 9:30 p.m. featuring several delicious entrée and dessert selections served with beautiful views of the Sierra Estrella Mountains.  The prix-fixe menu is $80 or $72 for seniors.  Begin the dining experience with a cauliflower velouté of crispy cauliflower, paddlefish roe and crème fraiche followed by a kohlrabi salad of buttermilk fried oyster, shaved fennel, strawberries, smoked almonds and a fresh citrus aioli.  Entrée highlights include; lobster and prawn agnolotti with Maine lobster, mascarpone, Pacific prawns topped with Champagne espuma, and charcoal rubbed ribeye with I’itoi onions, wild mushrooms, Yukon potatoes and a cabernet reduction.  Dessert offerings to include an indulgent liquid chocolate cake with warmed chocolate, raspberry hibiscus coulis and Tahitian vanilla bean ice cream or a strawberry and almond verrine with mesquite almond mousse, strawberry geleé and rosewater meringue.
